Proprietor Korrarit Panasirikasem
Red Chicken specializes in Thai and Singaporean-style chicken rice dishes, which owner Korrarit Panasirikasem honed his skills in the Southeast Asian island nation and ran a restaurant in his native Bangkok from 2007 to 2010. “We use special chicken, organic rice, hominy, and chicken stock,” says Korrarit. “Everything is made or prepared by hand.” He started Red Chicken (a name which he chose for its simplicity (“It’s easy to remember, easy to pronounce, Korrarit says) out of his love of cooking and his desire to showcase his favorite type of Thai food. “The Thai Town Marketplace is good for everyone, not just Thais,” he says. “It gives everyone a chance to start their own business.” He recalls unsuccessfully trying to get outside investment in his startup business, but Thai CDC’s project helped him get started. He hopes to grow Red Chicken and eventually open a second location.
